The cuisine at the Hotel Grand Pacific focuses on the use of fresh, local, organic and wild ingredients, and the four Victoria restaurants offer an outstanding taste of Pacific Coast cuisine. With an intimate knowledge of Vancouver Island, Executive Chef Rick Choy and Restaurant Chef Michael Minshull connect with the local fisherman and farmers who provide the fresh ingredients that create the cuisine. At The Mark, an exclusive, private, four-diamond dining room, enjoy exquisite West Coast fusion dishes, fine wines and impeccable service. The Pacific Restaurant and Pacific Lounge offer fine Northwest cuisine in a casually elegant setting, and fresh coffee, smoothies and deli-style foods can be found in the Courtyard Café. Each setting is unique, yet they all share the same commitment to exceptional service and respect for food.

The Mark

The Mark is an exclusive private dining room, seating just 26 people, that features the best in West Coast fusion cuisine, fine wines and impeccable service. It is a cozy, intimate room, where discriminating diners can experience culinary excellence with West Coast flair.

Guests will enjoy a private, relaxing, luxurious gastronomic experience, with unsurpassed service and an exciting culinary indulgence with some of the finest dishes in Victoria, made with only the very best local products. Chef Michael Minshull changes menus frequently to ensure each visit is uniquely delicious.

The wine list at The Mark has been created with this culinary philosophy in mind - that food and wine are intended to compliment each other and to inspire one another. In addition to building a cellar of classic wines from Europe, The Mark also offers a focus on New World wines and has a growing program of wines from the Pacific Northwest. Each wine is treated with care, housed in a temperature and humidity-controlled environment, and served in Riedel crystal stemware.

The Pacific Restaurant

The Pacific Restaurant offers a wide selection of West Coast cuisine. Casual elegance and friendly service are the accents. We believe that the right pairing of food and wine is determined by each guest and their unique personal tastes. The restaurant is partnered with the Sommelier Guild of Canada in Victoria, which bases their certification program at the hotel. Classic and unexpected choices from Vancouver Island, BC and abroad are offered, including some less familiar but exquisite wines from lesser-known producers and regions.

Single estate teas in English Tea Council-approved Bodum tea pots are also offered at the Pacific Restaurant, along with an extensive mineral water program, berry and honey based wines and sake by the glass.

The Pacific Lounge

The Pacific Lounge offers a relaxing atmosphere to enjoy beverages, including specialty martinis and a range of scotch whiskeys.

The Courtyard Café

The Courtyard Café offers specialty coffees, soft drinks, smoothies, fresh baked goods and tasty wholesome deli-style food.
